    Tara Gum

The food densifying agent alternative to Locust Bean Gum (LBG) and Guar Gum. Great technical value and cost effectiveness.

Tara Gum is a food densifying agent structurally similar to Locust Bean Gum (LBG) and Guar Gum. Tara Gum is a galactomannan, obtained through a mechanical selection from the skin of the pods of Tara (caesalpinia spinosa), a tree harvested in Peru. Tara Gum is able to offer economical and functional benefits with a wide range of applications in the food industry. Besides ice creams (both industrial and handcrafted), Tara Gum can be used for frozen desserts, cultured dairy products, condiments, baked goods and salad dressings. Tara Gum acts synergistically with Carrageenan and xanthan gum to increase gel strength and make such gels less prone to syneresis.

Available with three different grades of viscosity (low, medium, high), Tara Gum is approved and certified as follows:

    – GMO free
    – Gluten free
    – Kosher and Halal approved
    – HACCP
    – ISO 9001-2008
